Vegan Matcha Cookies – Legally Healthy Blonde

These vegan matcha cookies are bright, chewy and perfectly soft! Make them easy cookies in a bowl for a sweet treat or an energy boost!

If you like the subtle sweetness combined with the gentle bitterness of a matcha latte, you will love these vegan matcha cookies! They are like my vegan chai cookiesbut I changed the amount of brown sugar and, obviously, I used matcha instead of chai!

These cookies make a perfect breakfast cookie, energy boost, or just a fun green treat! This recipe uses simple ingredients you probably already have, cooks in 10 minutes, and only uses one bowl!

  • Vegan Stick Butter – I highly recommend using stick butter instead of jarred spreadable butter. Earth Balance is my favorite.
  • Brown sugar – Light brown sugar is best for these cookies, I don’t recommend substituting it.
  • White sugar – Regular white cane sugar is needed for this recipe. I don’t recommend replacing this.
  • Vanilla – I love using vanilla bean paste, but regular vanilla extract works too.
  • Vegetable milk – Any non-dairy milk will work. I used plain unsweetened almond milk, but you can use vanilla flavoring for a little extra sweetness!
  • Flour – All purpose flour. For gluten-free products, try to find a 1:1 flour mix!
  • Baking powder – Do not use baking soda as a substitute.
  • Matcha powder – Regular, culinary or ceremonial quality is suitable. The flavor won’t be affected by the choice, but the color will.

How to make this recipe

Step 1: prepare the ingredients

Preheat your oven to 350° Fahrenheit.

Remove the butter to let it come to room temperature.

Step 2: Form the Dough

In a medium sized mixing bowl, use an electric mixer to cream together the softened vegan butter with the brown sugar and white brown sugar until well combined.

To this mixture, add the vanilla and vegetable milk, then mix again over low heat.
