Vegan Broccoli Cheese Soup Recipe

My daughter’s first official job was at Panera Bread in Ohio, she enjoyed working there while in college.

So I asked her what one of the customer’s favorite soups was and she replied: Broccoli and Cheddar Soup it was definitely a success!

Personally, I have never had Panera broccoli and cheese soup, but I loved broccoli and cheese soup so much as a student in England.

I’ve been making and enjoying vegan versions for many years, but somehow I’ve never shared a recipe here.

Today as I was going through my fridge I was wondering what to make.

I decided to make a dish with broccoli, which is how this version of my dairy-free broccoli and cheese soup was created.

I used sweet potatoes for the nice cheesy color and it also added to the creamy texture with the cashews.

My daughter and son love it so much that she takes it as a packed lunch for college in her thermos.

How to Make Vegan Broccoli and Cheese Soup

You won’t miss the cheese or milk from the conventional recipe

. It’s much better for your heart. It’s easy to prepare and the results are tasty. You can use fresh or frozen broccoli to make this soup and you can garnish it with Coconut bacon.

  1. Heat a large pot with oil or water over medium-high heat. Add onion and sauté until soft, about 4 minutes.
  2. Stir in the garlic and cook for 1 minute. Add the broccoli florets, toss to coat, add the vegetable stock and bring to a boil. Reduce heat and simmer for 5 minutes until broccoli is tender. Meanwhile, prepare the cheese sauce.
  3. Place cashews and water in a blender and blend until smooth. Add the sweet potatoes, yeast flakes, onion, garlic, salt and pepper and continue processing until smooth and creamy.
  4. Transfer the cheese sauce to a bowl and set aside. Take half of the broccoli soup and blend it in a blender (I prefer it to be in large chunks).
  5. Return the blended soup to the pot with the cheese sauce and cook, stirring, until thickened. Enjoy on its own, with baked potatoes or bread.
