tips for success

  • Let the melted butter and chocolate chips cool for about 5 minutes so the other chocolate chips don’t melt when incorporated.
  • Measure the flour and cocoa powder by pouring them into the measuring cups and scraping the excess from the top.
  • Sieving the dry ingredients through a sieve helps break up any lumps. If you don’t have one available, make sure to mix these ingredients well.
  • We want to use exactly one cup of mashed bananas to get the perfect amount of moisture in the brownies.
  • Be sure to grease or line the baking dish with parchment paper so the brownies don’t stick to it. You can also do both if you want to remove the entire block of brownie for slicing on a cutting board.
  • Don’t overmix the batter to keep the brownies soft and tender.
  • Try not to overbake the brownies to a cake-like consistency (unless you want them to). The brownies are supposed to be slightly undercooked so that they are soft and fudgy.
  • It helps to slice the brownies with a hot knife for clean cuts. I like to run the knife under hot water and wipe it clean between each slice.

Storage and reheating

Cover brownies tightly and store at room temperature for 2 days, in the refrigerator for 5 days, or in the freezer for 3 months. Enjoy them as is or reheat them in the microwave for 20 to 30 seconds.
