Vegan Apple Crumble Cake – Serene Trail

This vegan apple crumble cake is so moist and delicious! It is made with a sweet vanilla cake, soft and juicy apples and a fondant crumb topping. Such a divine breakfast or dessert treat that everyone will love!

This irresistible treat has to be my favorite type of coffee cake! Even though it has several layers, it is incredibly easy to prepare.

It’s great for breakfast or brunch because it’s not too sweet and contains healthy fruit!

The soft vanilla cake layer is lightly sweetened to balance with the buttery crumble topping. I think you’ll agree that the crunch, flavor and texture of the crumb topping is out of this world!

In between are soft, juicy apples that are bursting with incredible flavor!

Just like my Vegan chocolate breadI like to make this cake with vegetable yogurt for a soft and dense crumb.

You can also add another layer of deliciousness by drizzling it with a powdered sugar glaze, Vegan Cream Cheese FrostingOr Vegan Butterscotch Sauce.

This apple cake is delicious all year round, to be enjoyed warm or cold, for breakfast or dessert, and with coffee or ice cream!

Ingredients and Substitutions

  • Sugar – Brown and cane sugars are used to sweeten things. Be sure to check the packaging is labeled as “organic” or “vegan” to ensure no bone charcoal was used to prepare it.
  • Flour – All-purpose flour is used in the crumble topping and cake layers.
  • Spices – Cinnamon and nutmeg add perfect warmth to accompany the apples.
  • Vegan Butter – Try using already salted vegetable butter. Otherwise, you can add a pinch with the butter.
  • Apples – Use your favorite sweet apples. I like gala, fuji, lady pink or honey crisp best here. You can also use Granny Smith apples if you want a more tart flavor.
  • Vegetable Milk – A whole plant milk like soy reacts better with cider vinegar. It doesn’t matter if it’s sweet and flavored or not.
  • Apple cider vinegar – Apple cider vinegar creates a vegan buttermilk when combined with plant-based milk. Lemon juice or white vinegar can also work.
  • Baking powder – You just need a little to help with the rise.
  • Vegan yogurt – This is very useful for creating a moist crumb. It can be unsweetened or unsweetened. I like this one by So delicious.
  • Vanilla – Adds a nice layer of flavor to the cake.

How to Make Vegan Apple Crumb Cake

  • Butter the dish then line it with baking paper. It helps to do both so the paper stays in place while you add the dough.
  • Make sure to let your melted vegan butter, vegan yogurt, and plant-based milk come close to room temperature. This helps them mix well with the other ingredients.
  • Measure your flour by pouring it into your measuring cup, then leveling it with a straight edge like a butter knife.
  • Don’t over-stir the crumble topping so it has small and large layers of texture.
  • Try not to overmix the cake batter so it stays soft.

Ideas for recipe variations

  • Replace some apples with pears.
  • Mix a little oatmeal into the crumble topping to create a streusel.

Vegan Apple Crumble Cake

Instructions

  • Preheat oven to 350°F. Butter an 8×8 dish and line it with parchment paper. Melt the two ½ cup portions of vegan butter in separate dishes. Let them cool. Take the vegan yogurt and plant-based milk out of the refrigerator so that they begin to come to room temperature.

  • Breadcrumb topping: Mix brown sugar, flour and cinnamon in a bowl. Stir in melted vegan butter until crumbly. Do not stir too much so that some of the crumbs remain larger. Cover the bowl and refrigerate it for now.

  • Mix plant-based milk and apple cider vinegar to create vegan buttermilk. Leave it aside for a few minutes to give it time to curdle.

  • Whisk together the dry cake ingredients (flour, baking powder, cane sugar, cinnamon and nutmeg) in a bowl. In another bowl, combine the wet ingredients (melted vegan butter, vegan yogurt and vanilla). We will wait to fold the wet and dry ingredients together until just before assembling the layers.

  • Peel and cut the apples into small pieces. Fold the wet and dry ingredients together until combined. Try not to overmix the dough.

  • Assemble the layers by spreading the cake batter on the bottom of the baking dish. Arrange the apple pieces in a single layer on top of the dough. Sprinkle the top with crumble and press down a little.

  • Bake it for 55 to 60 minutes. Test the center with a toothpick and it should come out clean. Let it cool for at least 15 minutes. Appreciate!
