How to Make Vegan Sheet Pan Fajitas

This is the easiest vegan fajita recipe you’ll ever make! All you have to do is chop your ingredients, season and bake!

Press your tofu. Make sure to press your tofu so it’s crispy and absorbs all the delicious flavor! Press for at least 15 minutes using a tofu press (affiliate link) or by wrapping it in a cloth and placing a heavy object on top.

Prepare your vegetables. Slice your vegetables and add them to a lined baking sheet. Season with your spices, salt and pepper and toss to coat well.

Slice and season your tofu. Once the tofu is pressed, cut it into strips. Move your vegetables to one side of the pan and on the other side add your tofu slices. Season your tofu and toss to coat with your hands.

Cook your fajitas in the pan! Evenly distribute the vegetables and tofu and bake at 400°F for 35-40 minutes!

Assemble your fajitas with soft shell tortillas, guacamole, vegan sour cream or any other toppings you would like and enjoy!

Change the vegetables! For this plate, I used zucchini, peppers and red onion, but feel free to use whatever veggies you have in your fridge! It’s a great way to get rid of those veggies in the back of your fridge!

How to make your tofu crispy! To make crispy tofu, always use extra firm tofu and press it using a tofu press (affiliate link) or by wrapping it in a cloth and placing heavy objects on it. It’s also important to use cornstarch in the seasoning mix because it helps the tofu get nice and crispy too!

Try some extra toppings for your fajitas! I love adding fresh guac, refried beans, tomato, and cilantro for extra freshness and flavor!

Use store-bought fajita seasoning! If you want to make this meal even simpler, you can season your tofu and vegetables with store-bought taco or fajita seasoning! Just be sure to add a little cornstarch when seasoning the tofu!

Do it without oil! You can easily omit the oil to make this recipe oil-free or swap it with vegetable stock!

Make it gluten free! This vegan fajita recipe is naturally gluten-free, but to make sure it’s 100% gluten-free, use a gluten-free tamari or soy sauce and serve it with corn tortillas or rice!

Forget soy! To make this recipe without soy, simply replace the tofu with chickpeas or another imitation meat of your choice.

  • 1 Red onion
  • 1 Yellow pepper
  • 1 Green pepper
