Sausage rolls are the most amazing comfort food. Made with vegan sausage, great seasonings and puff pastry, they are a winner. Serve with ketchup and mustard for an incredible meal the whole family will love. Bonus: these sausage rolls are super easy to make, perfect for entertaining and gatherings.

What you need for this sausage roll recipe

The main ingredient is vegan sausages which are truly delicious for an amazing meaty and hearty texture.
Puff pastry: I use a frozen one that comes in sheets. For the quantity given I receive a total of 9 sheets but it depends a little on the size.
OnionsAnd garlic are cooked with sausage in olive oil, which I find amazing because it adds a great extra layer of savory flavor.
Yellow mustard is an ingredient that makes our sausage filling delicious. So much flavor, simply because the mustard is amazing and I can guarantee you can use more for serving.
As a seasoning, dried parsley, dill And chili flakes are simply an amazing combination with a bit of punch.
Oat milk: This is our signature egg wash and gives incredible texture.
How to make sausage rolls
Preheat the oven to 420F and line a baking sheet with parchment paper.
Defrost your puff pastry. This will depend on your brand and whether it is available in sheets. Always check the manufacturer’s instructions for precise and accurate instructions.
Prepare the sausage filling
In a pan, heat the olive oil. Then add the onions and sausages, cook them for 2 minutes. Add the dried chives, dill, chili flakes and a pinch of salt and pepper.
Flour a surface, put puff pastries on it. I start with one leaf and add 2 tablespoons of filling. Fold the sheet and roll it up. Then cut them into 3 smaller rolls as in my photos. Repeat this until all the leaves are used.
Finally, transfer 1/4 cup of oat milk to a bowl and get a pastry brush. Brush all sausage rolls with milk, transfer them to your prepared baking sheet and bake for 17 minutes.
Serve them on plates and enjoy.
Tips and tricks
Leftover sausage rolls are delicious for 4 days and can be reheated at a low temperature in the oven. Alternatively, you can reheat them in the microwave.
As you can see from my instructions above, I don’t use a rolling pin to prepare my puff pastry before folding it. After testing, I found that by rolling them out before the folding step, the dough will be too thin and break easily. Therefore, I do not roll out the dough, it will keep this shape, will not break (plus it is so much easier).
