Recipe Tips for Peppermint Mocha Baked Oatmeal

High Protein Frosting – For those looking to increase their protein content, try a high-protein frosting alternative. Mix vegan yogurt with your favorite vanilla protein powder until you have a thick frosting-like consistency. This adds a hint of protein but also improves the creaminess of the filling.

The magic of making ahead – Maximize convenience by making Peppermint Mocha Oatmeal the night before for a stress-free holiday breakfast. Follow the recipe and refrigerate the peppermint oatmeal bar slices to serve in the morning.

Tips for Preparing and Storing Meals – These baked oats are delicious right out of the oven and also make great leftovers. Store any extras in an airtight container in the refrigerator and enjoy with your morning coffee or afternoon tea for up to 5 days. They’re surprisingly delicious when served cold, making them a versatile choice for meal prep.

Substitute vegan yogurt for an equal part of applesauce or 1 banana puree.

Make it without protein powder – Simply omit the protein powder and reduce the soy milk by a quarter cup.
