Instructions

  • Place everything except the vegetable stock and barbecue sauce in a large bowl or ziplock bag overnight. Close tightly.

  • The next morning, pour the marinated jackfruit into the slow cooker with the vegetable stock. Stir to combine.

  • Cook over low heat for 6 to 8 hours.

  • During the last 30 minutes of cooking, stir in 1 cup of your choice of sweet barbecue sauce.

  • Serve on buns with coleslaw, extra barbecue sauce and pickles.

Meal Preparation Instructions

  • Place all ingredients, except broth, barbecue sauce, and serving ingredients, in a gallon-sized ziplock bag. Seal tightly, removing as much excess air as possible. Refrigerate for up to 5 days.

  • When you’re ready to cook, pour the contents of the bag into the slow cooker, add the broth and cook as usual. During the last 30 minutes of cooking, stir in 1 cup of your choice of sweet barbecue sauce.

Freezer Instructions

  • Place all ingredients, except broth, barbecue sauce, and serving ingredients, in a gallon-sized ziplock bag. Seal tightly, removing as much excess air as possible. Freeze for up to 3 months.

  • When you’re ready to cook, pour the contents of the frozen bag into the slow cooker, add the broth and cook as usual. During the last 30 minutes of cooking, stir in 1 cup of your choice of sweet barbecue sauce.
