Fall Squash Soup – Healthier Steps

Most people view soups as intimidating, time-consuming, and content to eat soups from a can, carton, or restaurant. This fall squash soup is a real game changer.

I’m not even going to lie, I’m one of those people too, but this easy butternut squash soup recipe will change your mind. Others easier are Vegan White Bean Soup, Vegan potato, leek and carrot soup And Vegan Cabbage Soup.

An amazing soup, perfect for a quick weeknight dinner, that the whole family will enjoy and is ready in less than 30 minutes.

It’s the spices that make this creamy butternut squash soup recipe so special. I added some of my Jamaican curry powder, and no, it’s not curried butternut squash soup!

But curry powder (and a few other spices) gives the flavor a complexity that cuts through the sweet, creamy taste.

I have made this butternut squash soup several times, differently each time. If you don’t have vegetable stock, you can use stock or similar ingredients and just add water.

If you don’t have your usual plant-based milk to drink, add canned coconut milk or just more cream cheese. On the other hand.

You could probably use coconut cream (unsweetened) instead of dairy-free cream cheese. Mind you, I haven’t tried this, but worst case scenario the soup is just a little thinner.

You can also use sweetened vanilla milk without affecting the taste since it is already a sweet soup.

Can I use frozen butternut squash to make soup?

If you can’t find fresh butternut squash, use frozen, which is what I had to do this time. It was just as amazing! Anyway, this butternut squash soup is very indulgent.

How to make butternut squash soup?

I sauté my onion in coconut oil for an infusion of flavor, add my raw vegetables, liquids and spices, bring to a boil, then let it simmer. Once my squash and carrots are tender, I add my creamy ingredients and sugar, then mix. That’s it, friends!

What to replace butternut squash with?

You can try almost any winter squash, like acorn squash, kabocha squash, or sweet pumpkins. Experiment and find your favorite!
