This quick and easy dish is a great way to start your day. It almost feels like eating dessert for breakfast!

These lightly sweetened oats are moist and full of irresistible biscoff flavor. They are so creamy and just as delicious hot or cold.

The oats and chia seeds absorb the plant-based milk to form a thick, pudding-like texture. You can prepare them the day before or at least a few hours before eating them.

Biscoff is also known as Lotus (the company that makes it) or spekuloos in Belgium. It is a spread that has a texture similar to nut butter. Biscoff tastes like cookie butter with hints of cinnamon and ginger.

  • Oats – Use oatmeal or old fashioned. When it comes to oats, I try to stick to organic. You can also use gluten free here.
  • Chia Seeds – Chia seeds work with oats to absorb liquid. They also add healthy fats, fiber, and antioxidants! Flaxseed meal would work instead.
  • Maple syrup – Maple syrup serves as a refined natural sweetener without sugar. Agave syrup can also work.
  • Vanilla – Pure vanilla extract here adds a delicious warmth that pairs very well with the Biscoff flavors.
  • Vegetable Milk – Any milk of your choice works. I prefer almond, oat or soy.
  • Biscoff – We mix into crumbs Biscoff biscuits for extra flavor and top them with a fondue-based ganache topping Biscoff spread.

How to Make Biscoff Overnight Oatmeal

First of all, combine oatmeal, chia seeds, maple syrup, vanilla and milk in a bowl.

Following, crush two Biscoff biscuits and add the biscuit crumbs to the mixture. We will use the other cookies for toppings.

Divide Pour the oats into two small bowls or cups and press them into the crevices of the dishes. I usually use glass bowls or mason jars, but plastic containers can also work if you plan to take them with you when you go out.

Melt the Biscoff spread in the microwave for 20-30 seconds and pour Above.

For each bowl, to break a biscuit in two, wedge it in the Ganesh Biscoff and crumble the rest to obtain sprinkle up.

Blanket each dish with a fitted lid or plastic wrap. Refrigerate them for 2 hours or more. The oats will soften, the extra liquid will be absorbed, and the flavors will deepen during this time.

Appreciate daily oatmeal cold or reheated in the microwave! You can also add a little more milk to dilute it if you like.
