The result tastes like an amazing restaurant, but you can make it inexpensively.

No fancy equipment required, just mash and enjoy.

What you need for this Baingan Bharta recipe

Eggplant: I use medium eggplants and it takes me 30 minutes to roast my eggplants in the oven to easily mash them and remove the skin and flesh.

Tomatoes add a little juiciness to our dish.

Oil: Use canola Or sunflower oilbut you can also use olive oil. Be aware that the taste of olive oil will be more pronounced.

Garlic And onions make it even more delicious. Add another layer of flavors.

Seasonings: We are looking for a lot of flavor in addition to the Garam masala we are using cumin And chili flakes. It all ends with coriander. Use fresh cilantro whenever you can.

How to make Baingan Bharta

Preheat the oven to 430F and prepare a baking sheet with parchment paper or take a casserole dish.

Roasted eggplant

Pick your eggplants with a fork from the skin and do this at least several times.

Then distribute them evenly on the baking sheet or in the casserole dish. Place in the oven and cook for approximately 35 minutes.

While the eggplants are roasting, heat the vegetable oil in a frying pan. When hot, add the onions, garlic and chilies and sauté for about 2 minutes.

Then add the tomatoes, cumin, garam masala, chili flakes and turn on medium heat. Simmer for another 5 minutes so that the tomatoes soften.

After 35 minutes, the eggplant flesh should come away very easily from the skin. Otherwise, roast them for another 5 or 10 minutes.

Put the flesh directly into our pan and use a wooden spoon or fork to mash it.

Season with a pinch of salt and pepper and serve in a bowl or on plates, enjoy.

Tips and tricks

Leftovers can be used for about 5 days and will taste amazing, but the flavor will be even more delicious.

To freeze: let cool completely, store in a freezer bag or make individual portions.

As I said above, serve plain or with Easy Roasted Garlic Naan.

Don’t like chili? Leave the chili peppers aside and use less chili flakes.
