This vegan banana bread tastes so good and really only requires 5 ingredients to make. Each of them has been carefully selected to make this bread work. Substitutions can be tricky because most ingredients serve multiple purposes…

  • Bananas are full of flavor and natural sweetener, but they also work like eggs to bind the dough together.
  • Salted butter retains moisture and has just the right amount of salt to balance and enhance flavors.
  • Brown sugar softens the bread while giving it a warm flavor thanks to the molasses it is made with. This is similar to how vanilla extract usually works.

Ingredients and Substitutions

Labeled ingredients for banana bread.Labeled ingredients for banana bread.
  • Bananas – Use your ripe bananas. The more brown spots, the better due to their natural softness.
  • Vegan Butter – Salted vegan butter like that made by Country Crock or Earth Balance is just what you need.
  • Brown sugar – Light or dark brown sugar works. Be sure to select packaging that says “vegan” or “organic” to ensure it is truly free of animal ingredients.
  • Flour – All-purpose flour creates a light, fluffy texture. You can also swap it out for a 1-for-1 gluten-free replacement, like the one made by Bob’s Red Mill.
  • Baking powder – Baking powder helps bread rise. Make sure yours is not expired to ensure good rising. I like to use the non-aluminum type.
